Malaysian-Style Cauliflower Rice Recipe For a Healthy Cheat Day

After a long festive holiday with all that good but greasy food consumed, its time to be hipped and cook something ultra healthy yet delicious and most importantly simple.

This recipe is inspired by my all time favourite Malaysian Chinese-style fried rice. This is a wonderful yet satisfying carb-free dish. In addition to that you are adding more vegetables to your diet.

Method:

a) Preparing the cauliflower rice

  1. Pulse the cauliflower florets in the food processor until it looks like coarse grains.

Note: Make sure you prepare the cauliflower rice just before you’re ready to cook everything else. Keeping it in the fridge will make it turn soggy. That’s definitely a great texture when you’re making fried rice!

b) Preparing the omelette

  1. In bowl, add in 2 eggs, 1 tablespoon of water, a pinch of salt and pepper. Lightly whisk with a fork til frothy and mixed well.
  2. Heat 1 tablespoon of cooking oil in a pan on medium high heat.
  3. Pour in the egg mixture and make sure the whole pan is coated evenly. Let the egg cook for 2 minutes.
  4. Flip it over and cook the other side for another 1 minute.
  5. Turn off the heat, place the omelette on to a flat plate, roll and slice with a knife. Set aside.

c) Frying the cauliflower:

  1. Heat 1 tablespoon of cooking oil in a pan on medium high heat.
  2. Saute the garlic and ginger till fragrant.
  3. Add in the shrimp and fry it for 5-6 minutes until it turns pinkish red.
  4. Add in the cauliflower rice and stir for 4 minutes.
  5. Add in the snow peas and grated carrot. Mix well.
  6. Add in the sesame oil, soy sauce, vinegar, salt, pepper and chili flakes. Stir well for 2 minutes and take it off the heat.
  7. Garnish with sliced fresh chilies, fried shallots, coriander, spring onions, sesame seeds and lime.
