SugarLou’s Basic Moist Chocolate Cake

Method

  1. Preheat oven to 175° C.
  2. Prepare one 8-inch round cake pan (grease your pans with butter and dust with flour).
  3. In a mixing bowl, sift the flour, cocoa powder, baking soda and baking powder.
  4. Add in the brown sugar, fine white sugar and salt.
  5. In a separate bowl, combine the eggs, buttermilk, oil and vanilla and beat lightly with a fork.
  6. Add milk mixture to the dry ingredients and beat for 2 minutes on medium speed.
  7. While you’re beating your mixture, slowly pour the coffee in a steady stream.
  8. Pour the batter into your prepared pan. (Batter will be thin and runny.)
  9. Bake for 30 to 40 minutes (every oven is slightly different so to be sure your cake is ready, stick a toothpick or satay stick into the middle of your cake after 30 minutes. If it comes out clean it’s done).
  10. Cool on wire racks for 20 minutes then gently invert onto racks until completely cool.
  11. For a truly decadent chocolate cake, prepare chocolate ganache and pour over the cake. So good.
I love the dark-chocolatey-sheen of chocolate ganache on my basic moist chocolate cakes!
